When I say this is the first Chiang Tung noodle bowl in Thailand, I’m not sure if it really is, as I’ve traveled many provinces and just recently discovered this style of Chiang Tung noodles. For now, I’ll claim it as the first in Thailand. If anyone knows of another place, please let me know so I can update the information. According to the shop owner, their relatives are from Chiang Tung.

I should mention that Chiang Tung is a province in Myanmar bordering Mae Sai in Thailand. It is the original home of the Tai Yai people. The Tai Yai call it Shan State, or the state of the Shan people, or the state of the Tai Yai people. Shan means Tai Yai. Relatives from Chiang Tung shared how they make Chiang Tung noodles there. The shop owner was inspired to open this noodle shop. I’ve tasted it and liked it. Their noodles are delicious, prepared fresh bowl by bowl, using various vegetables for seasoning.
They pour the sauce over wide rice noodles. When eating, enjoy it with boiled egg and chili lime. This shop is located right in Wiang Haeng district, called "Pa Ron Chiang Tung". I think coming here just to eat Chiang Tung noodles in Wiang Haeng is worth the trip. Although Myanmar has opened the border for travel to Chiang Tung with a daily guide fee, it’s better to enjoy Chiang Tung noodles here. I will take you to Chiang Tung myself soon.
